BAKERY IS BACK: Country Apron Bakery reopens with new owners after unexpected health issue causes Hatchers to close shop

Country Apron Bakery has been more than just a place to buy pastries since its opening two years ago. It’s served as a hub of the Theodosia community in many ways.

Most of that community spirit is thanks to the wonderfully warm and talented Gretchen Hatcher, whose bright, sunny personality matches the sunshine yellow walls of the uniquely-decorated shop.

It was 2020 when Gretchen opened the bakery with husband Mike and youngest son Aaron, a talented pastry decorator in his own right, and they have since provided the Theodosia community with not only delicious cakes, pies, pastries and lunches, but with a slew of fun ways for the community to get together: painting classes, craft shows, breakfast with Santa events and more. 

The bakery customers have become more like family than customers to the Hatchers. 

So, when Mike posted to the Country Apron Bakery Facebook page in early September explaining that the bakery would be closed due to an issue with Gretchen’s eyesight, patrons were concerned and reached out. 

“We are humbled by the outpouring from our community who have been sending prayers and encouraging words to Gretchen. We wish we could give you all some answers but we really don’t know why Gretchen has lost her sight…” Mike posted. “We both are at peace with this and will take one day at a time. We both believe there will be a great testimony when this is all done and we are keeping you all informed so God will be glorified and you can all share in seeing it come about.”

After her appointment that day, Mike posted again explaining that doctors believe Gretchen suffered a mini-stroke that has caused blindness. He explained that the bakery would be closed for the foreseeable future as the family began navigating the many appointments and surgeries that lie ahead for Gretchen. 

On Sept. 11, Mike announced that they had decided to put the bakery up for sale. 

“We started the Country Apron Bakery on the July 4th weekend, 2020. Right from the start, we saw our community come together and we have made such good friends and have so many memories…” his post said. 

Mike continued to post updates on Gretchen on the Facebook page, ensuring that she’s kept a positive attitude through the unexpected challenge.  

Pam Mathews, who worked for Gretchen at the bakery during the 2021 holiday season while on break from her regular job at nearby Cash Saver Pantry, was one of the many local residents who was both concerned for the beloved baker and hated to think of the bakery closing its doors. After talking it over with her husband Russ, the couple decided to purchase the business. 

“[Mike and Gretchen] saw a need for a bakery in our community…Russ and I just want to carry on what they have started,” Pam told the Times. 

The Mathews are reopening the bakery Monday, Oct. 10, and plan to continue serving breakfast and lunch, along with the homemade cookies, turnovers, cupcakes, specialty coffees and the other sweet treats Country Apron is so well known for. 

“Once we learn more from Mike and Gretchen, we hope to expand the breakfast options,” Pam said. “To continue success for the bakery, we need the communities support and accept any ideas that we may be able to implement.”
